I'm in the process of making a Sauvignon Blanc from a Vintners Reserve winexpert kit. In the directions it wants the wine to be checked 5-7 days after it started to see if the wine is ready to be moved to secondary.

We checked 6 days after the beginning and it wasn't quite where it needed to be yet, so we sealed things back up and intended to let it go for another few days. Well life got busy and we did not get to check it again until 8 days later. Now the specific gravity is past where it is supposed to be even at the end of secondary.

At the end of primary it was supposed to be in the 1.080-1.097 range. At the end of secondary it is supposed to be .996 or less.

We went ahead and moved it to secondary a few days ago, but now are unsure if we should wait 10 days to degas and clear or if we should just do it now.

If we wait what would that mean for the wine if the specific gravity continues to go down?

Any tips would be greatly appreciated

Your wine is now dry, the SG will not go any lower. You will be alright with everything you have done so far. Go ahead and add all the remaining chemicals

I don't believe you said what the SG actually was when you moved it to secondary.

You wine might have been SG of 1.080-1.097 at the beginning of primary, but was it really that high at the end of primary?
