Step 4 says after 8 days "1.Rack the wine into a clean, sanitised carboy. Take all of the clear wine, and leave the
sediment and oak cubes (if present) behind."

What, only let the oak cubes contact the wine for 8 days? What do you guys do? Can I put the oak cubes in after my wine after clarification for like 8 weeks as opposed to 8 days?

Sure, just rinse any sediment/lees off it and toss into the now racked/clean carboy with wine. If they are oak beans/cubes they will normally be fully extracted in about 3 months.
 
I'm doing a Lodi Ranch Cab and decided to wait until it was ready to bulk age before adding the cubes. I'm going to leave them 8 weeks minimum, testing periodically.
