I just started a batch yesterday

40 lbs of strawberries,( frozen kind from walmart)

1 gal water ( in pot, heated to thaw strawberries)

4 tbl petic enzyme

8 tsp acid blend

2 tsp tannin

10 lbs sugar

After heating the strawberries in water till thawed, I placed them in the fermentation bucket, sprinkled a tbl of petic enzyme and put lid on.

Took a while to get them all thawed but once they were I added everything else to fermentation bucket, added yeast and lid.

My sg is a little higher than I wanted but it will turn out just fine in the end.




I guess heating them up some helped a bunch, I just checked them and most of the berries are already liquefied, and the air lock is running hard and I mean hard.



By the time I got all the berries thawed good, my 1 gallon of water looked and smelled like strawberry syrup, this look like it may be my best batch of strawberry yet.:br

How much did 40lbs and 1 gallon of water yield?
 
Why did you add acid blend, that many berries should have still put you a little over .7% TA. We just started a strawberry mead last weekend, 40 pounds macerated with enzymes and squeezed, gallon + honey, no acid blend and then when the SG was at 1.02 added another 10 pounds of berries just for one day to boost the flavor before pulling them out. Making strawberry wine for the wife allows me to make anything else I want later :):) WVMJ

Just what I did before and the wine is fantastic.

I really need to get a TA tester.
