After cold stabilization, if wine is left to warm up for 1 day, 2 days, 1 week, would the crystals or some of the acid be absorbed back into the wine? Is better to rack when cold? bk
 
I prefer to rack when temp is at least back up to 40* but I do not wait more than 24 hours before racking. Some acids may go back in but the crystals do not disolve.
 
I let the wine come back up to room temp - then rack. Don't want the cold wine hit the new carboy and crack it.

Usually takes about 24 hours to come back to room temp.
