So our elderly neighbor started some blackberry wine.
OG on 01/8/2013 was 1.100
Today it is down to 1.010. The wine did have sorbate and campden added on 2/18/13. My guess is the yeast died of alcohol poisoning.

She did add too much sugar initially thus the high OG.

It tastes fine and she wants me to bottle it for her because I have the AI1 vacuum pump and we are not willing to loan it to her because she has a hard time following directions.

The gravity is not likely to go lower because it was February when she fined and added sorbart and campden. The wine is clear. It tastes fine and the alchol is fairly dominant. Flavor is not too bad.

What do you all think?
 
1200 posts and you post a newbie topic?:) Add some more sugar to 1.02, run in thru your filter and bottle it. The type of yeast wasnt incleded, was it a wine yeast or bread yeast? Did she want more alcohol? drop some everclear in it. What else is there to consider since it already has sorbate in it? WVMJ
 
You has best hit it a couple of times with your vacuum pump. Four months is not nearly enough time to assume its degassed.
 
I agree with WVMJ....need a bit more info, especially the yeast used. Many can handle 1.100 without blinking an eye. Has the SG been 1.010 since before the neighbor added the campden/sorbate?
Personally, I would tell the neighbor that you cannot in good faith bottle the wine for them because it is just far too early. If they decide to bottle on their own then they made that call, on their own. I know the neighbor, from other posts you've made, seems to look to you for guidance & if you bottle this wine now and there are issues the neighbor will more than likely blame you.
 
I am not sure but relatively it was lavlin 71B, she does no remember and neither do I. I make a lot of fruit wine and that yeast is all I buy. I don't remember if she got the yeast from me or something she bought on her own. I do plan to hit it with the vacuum pump a couple of time today to see if it is gassy. Her son brought the carboys down this morning to us.
