My MM Gewurtz is now at step 4. It was racked to glass for the second time 8 days aga. According to instructions, I should rack once more, add Potassium Sorbate and the conditioner that came with the kit, filter and bottle. My question is, would it hurt anything to leave it one more week before bottling. I have to leave town and must either rack and bottle today or tomorrow or wait a week. If I can wait I would like to. Also, do I add potassium metabisulfite if I wait another week? For six gallons how much?

Time is always on your side when making wine so leave it the extra week or more. You should still have a package of sulfite , sorbate, and the conditioner unless you added the sulfite a week ago or so, if you have not added this yet then now would be a good time to add all the above and let it sit for the week to make sure it doesnt start fermenting again. you should always wait about a week or more after sweetening your wine to make sure it doesnt start fermenting again as it is possible that it could but highly doughtful. If for some reason you dont have sulfite and you havent added it after fermentation was done then you will need to add 1/4 tsp to the 6 gallons before adding the sorbate. Mix the sulfite into a small amount of water and make sure it is dissolved well before adding to your wine and then do the same with the sorbate, this makes sure you dont getwhite floaties in your wine.
Sulfites added 9 days ago along with siligel and liquigel. Wine is clear as a bell. I do have more sulfites if it would be safer to add 1/4 tsp. Oh Boy, add sorbate and conditioner and wait. That means I get to sample!! Hurray, I'm gonna luv this hobby!..... Uh, you gonna be around if I come home from this trip and this thing is bubbling again?
