I just started 2 gallons of rhubarb wine in 2 separate gallon jugs. Usually at this stage I have more than I need to fill the carboys, but this time I'm short. At what point do I need to worry about topping off the jugs. They have been in the carboy about a week.
 
Once all alcoholic fermentation is completed, top off and keep topped off until bottled.
