Glad to be in this esteemed group.

Is anyone else making wine from tropical fruits? I have made pineapple and banana wine and i am now about to delve into Cashew Apple wine. Has anyone done this ?

Lots of tropical fruit makers here. Although I would wager not many making wine from the fruit of the cashew apple (https://en.wikipedia.org/wiki/Cashew). I myself was surprised about 10 years ago to learn about how cashew nuts are formed, and about the fruit that comes with it!
Yeah I was very doubtful about banana wine until I made a batch, and it is surprise. I was told to try cashew apples as they make a very good wine so lets see.
 
Welcome to WMT from a fellow fruit wine maker. All wines start as a pH balanced fruit juice and in the last few years tannins (natural antioxidants) wind up in many.
Thank you, I used to get my tanin but adding a super strong liter of black tea but I think cashew apples are dry enough in the taste to not need it. However I am tempted to still add the 1 liter of fresh orange juice to boost the acidity.
