I have 55 gallons of cab Sauvignon 14.5% must and 60 gallons of Sangiovese/vinfendel 13.5%. I used red star Montrachet which is only rated for 13 percent. What do I do? Just added the yeast last night.

The yeast will probably finish just fine. But you can always add another yeast at this point and it will continue along after the other stops working.

I would make a good starter with RC-212 and add it. It has a tolerance of 16 percent and should outlive the Montrachet. Be sure to add adequate nutrients, that Montrachet is pretty picky and can cause nasty things to happen when its not happy.

Thanks for the info guys. If I add the yeast in two days ( the Montrachet is already working) is that ok? Can't gets hands on rc 212 for a couple days

Do you have anything but Montrachet on hand? EC-1118 or Premier Cuvee? Either would work well. I would add your alternate yeast sooner rather than later.
