I bought a Vinefera Noble Kit last month (I noticed they are on sale THIS month!!, oh well...). Anyway, the kit I got was Gamay. I've never tried a Gamay and I've had a hard time locating one in any of the local stores, so I just figured I'd dive in anyway having absolutely no idea what the finished product would be like.


These kits come with toasted oak chips vs the oak powder I was used to in the WE kits. The chips are to be added when you rack from the primary to the secondary. The directions state that this racking should take place when the S.G. reaches 1.020 or less.


Warning!! 1.020 or less means just that, not 1.023 where I racked at. Yes, I cheat sometimes. What cheating got me this time was about a half a bottle of wine on my floor because 10 minutes after I left the room the wine decided it wanted out of the carboy so it went up through the airlock like a geyser. Of course I wasn't in the room at the time and if I hadn't walked by at the right moment and noticed purple liquid flowing from under the doorway this may have gone on for quite some time. I was able to quickly rack a couple of gallons into a 3 gallon carboy and then added it back the next day, which was yesterday. It is still bubbling happily along, but I have some head space I'll have to deal with when it comes time to clear.


I just wanted to put that warning out there so none of you make the same mistake I did.


BTW, based on taste tests so far, I think I'm going to like this one.

I have seen that happen with a lot of the mosti kits. I usually rack 5 gallons, then let the foam die down before I finish.
 
These Vinefera Noble kits seem to have a very active fermentation even at a SG. of 1.020...I have done two of them and luckily I racked to a 6.5 gal carboy on the first one to find I needed that extra room....and still got wine in the airlock....I'm bulk ageing right now on the first two...For a 10 L. kit I was pretty impressed with the taste...A little time on them should be interesting...Have one more kit waiting to start and this sale, well I'll just have to decide which ones to get.
 
Started another Vinifera Noble Kit today [Pinot Noir]... They changed the instructions to rack to the secondary at 1.040 to 1.050.....That could be pretty wild..

Better hold back a gallon with that change, that really seems a little high and might volcano. Be careful with that 1.
 
OH , I plan to be careful, don't want to lose that nice juice....I plan to go slow and use my 6.5 gal carboy...Hope it works..

Hey Bert....
I started my latest kit monday..the MM Viniferapinot noir. Please keep us posted on your first racking, I will be only a couple days behind you! I sure don't want to lose any wine to the floor!
 
Thanks for the word of caution Whino Wino .I started the V N Pinot Grigio last night and it tasted wonderful.
 
Racked the Pinot Noir tonight to a 6.5 gal. carboy...SG. at 1.028, but the heavy fermentation just stop this morning...Added oak.....Hope there is room for foam...Other Vinifera Noble kits foamed up a lot after first racking....Good luck with yours, fish1onthefly...

One more thing I noticed with this kit. It says to stir it every day to keep the oak suspended, so I did that. Then, when the fermentation is done and it's time to rack to a clean carboy, it says to avoid siphoning the sediment. Well I just spent the past week stirring up the sediment so I though it best to let it sit an extra day or two before siphoning. Just something you might want to consider.....
 
Bert, I just finished bottling the Vinifera noble kit "Piesporter". It is a semi-dry German white that is delicious on a hot summer day. :)
 
Piesporter is very nice wine....Have my V. N. Pinot Noir in the secondary, it didn't foam up like the last two.....Got a package from George on Friday, two more V.N. kits [Cabernet Sauvignon and a Gewurtraminer]....Will wait until my 6.5 gal. is empty to start these. Edited by: PolishWineP
 
uavwmn....Did you do any bulk ageing on your Piesporter or clearing and right to the bottle???
 
Bert, I haven't bulk aged any of my wines. I make sure the wine is crystal clear, then bottle. My neighbor made this wine and we tasted it early and it is going to be a nice late summer white.
 
Bert, I think the MM kits will be my primary kits this Fall. I especially like the V.N. kit so far.


I have the limited edition cab Sav del veneto in the carboy now.

PwP, did you make a Piesporter? How long did you wait before you opened a bottle? This one will test my will-power.

I'm planning to try my first Vin Noble kit. I need some dry whites for early drinking. I want the Pinot Grigio but for a second, having a hard time deciding between Sauv Blanc and Soave. I've never had commercial Soave so I don't know what to compare it to. Anyone have any comments on any of these kits? I had orig planned to get WE WV kits (Pinot Grigio and Trinity White) but with the current prices, seems like a good time to try the MM. I also see the Johannisberg Rielsing is dry too so that's another possibility. I have the WE LE Australian Rielsing going but I plan to age that one atleast a year.Edited by: Jackie
 
OK, my mouth is watering now!I just ordered the MM VN Pinot Noir last weekend without even seeing this thread first, but now it sounds even more like I made a good choice.Guess I need to hurry up and get my Meglioli Riesling bottled first, though. (Started that one on Feb 2 and it should be ready to bottle in a few more weeks.)
