I have 2 Vinifera Noble kits (Shiraz and Castel Del PaPa) that have been on the garage floor for 5 months. The garage is air conditioned, but still has temperature swings (Texas) from the door opening. Is the concentrate still ok, as well as the additives? Should I go ahead and make the wine or am I wasting my time? I purchased these kits for simple table wine to keep the natives drinking and out of my better wines as they age.

You should be just fine. I was worried once about my kits being shipped in very hot 100+ weather because they sat on the FedEX truck in the heat over the 4th of July weekend. I contacted George and he said they would be fine but just make sure they were at room temperature before starting them. I say you don't need to worry.
 
What is the date code on these kits? Most likely if you bought them from George you are fine for awhile but I have seen some people buy kits from other places and those kits must have been on those shelves for years! The yeast packet should also have a expiration date on it.
