So my girlfriends dad gave me a couple 6 gallon class carboys, a fermenting bucket, all airlocks and such for the three, and everything else you could need to make wine. I blame him for this addiction. I currently have a cranberry/strawberry made from concentrates and a fresh strawberry batch on secondary fermentation. I feel the need for many more carboys so I can start a watermelon and some sort of peach mango. The strange part is I don't even drink alcohol, obviously that's gonna have to change. Why is this so freaking addicting? Am I the only one that loves the sight of a bubbling airlock?

Personally I am drawn like a moth to the flame over the Smell of a wine in a full ferment. As to carboys, you could go the cheaper route of gathering 4 liter bottles/carboys from your local recycling center. More effort in some ways but 4 liter carboys allow you to do small batch experiements. Carlo Rossi is the common brand of empties I find here and they are 4 liter so it requires almost no adjustment of a 1 gallon recipe to do that. I also like the 4 liter carboys because when I do the bottling, I get a nice glass of wine left over after the bottles are filled.

Welcome to the world of doing things that most folks can't.
Of course they can, or think they can but it's not simple, folks like things simple, easy is good but, easy + complicated = they don't do it.
I give away more than I drink as well.
