I was at the store with the family and picked up 2 (2qts) or Welch’s white grape peach juice. I figured it would be fun to experiment with I would love an advice an one has to offer.</A>

Have a search of the Fruit Wines or Recipes section of the forum. Several of us have made Welches White Grape & Peach from the frozen concentrate and it's turned out pleasingly well by most reports. The 1 gallon batch I made from a 2x 2qt bottles of juice (pmoegranate & black currant) was a bit thin, pleasant but thin and if I did it again I would add some frozen grape concentrate to beef it up.

Thank you. I think I have an idea on how I would like to do
this. Thinking about making a 2 gallon batch in the primary fermenter , then splitting
in to 2 one gallon batches one for dry and one for sweet. Just to see the
difference. I all ways ready about people back sweating but I don’t understand
how. What would you recommend using to back sweating the white grape peach?

After fermenting totally dry, and having a clear wine that isn't throwing any further deposit, for the welches white grape and peach batch that you want to sweeten, I personally would use some frozen concentrate Welches White Grape Peach.

Just how much to use, would depend on how sweet you want the final wine to be. Go by stages, add a spoonful of the concentrate, mix it up well into the wine, taste... repeat as necessary till you get it 'just right'. If you overshoot and it gets too sweet, use some of the other batch dry wine to blend it back to the taste profile you want.

ok thanks a lot one more question. i have a 6 gallon frementer would it be a problem if i frement only 2 gallons in it if i use an air lock. or should i just order a 2gallon frementer and to 2 one gallon batches. thanks again for all your help.

No problem, you may not get very much airlock activity but you'll be fine.

wiley, stop by the donut shop in the morning and ask them if they have any free buckets. They are all food grade and if they have a 3 gallon it works great for smaller batches of wine

Ice cream shops also have 3 gallon food grade buckets.

I got a few 3 gallon buckets from a bakery (icing buckets). Took a bit of cleaning, but worth the effort.

also try some grocery store that have a deli/bakery. Winn Dixie (Southest U.S.) has them as most any other chain of grocery stores.
