I've been wondering what the difference is between acid level and ph. I
always thought that they are the same. Ph being the range of acid or
alcalinity, with 7.0 being neutral. Could one of you learned sages of
the vine please school this poor humble grasshopper even though I am
must unworthy.

The quick explanation is that the TA (titratible acidity) is the amount of acid in solution and pH (potential of hydrogen) is the strength of the acid based on a logarithmic scale. This link will give you plenty of info on the details:
