Looking for suggestions to top off

I am liking the idea of blending.Something rather neutral, Pinot Grigio or Sauvignon Blanc, or go the other way, Riesling, Viognier? Also depends on how much you need to top off. If it’s a gallon needed for a 5g carboy I would probably stay neutral. I also like to blend, so me personally I would use the wines with distinctive character.
