I made a fortified La Bodega this summer - it turned out marvelous.
After fermentation I clarified then put it on oak for a month (I like oak).
I racked to the bottling bucket then added the fpack and fortification.
I fortified with three cups of Everclear flavored with Liquor Quik XO brandy essence and three cups of E&J VSOP brandy.
This brought the ABV to 20%.
At 20% ABV the alcohol content is high enough that I didn't add the sorbate.
This Porto turned out most excellent!!!
