I have a batch of Strawberry going right now and need a little advice. Here's how I got to where I'm at:

Started wine with an initial SG of 1.091 after 4 days in the primary the SG was down to 1.009 so I racked to the secondary. I racked everything so now I have some pulp and the gross lees in the secondary.

6 days later (today) I measured the SG and it is at .990 so I think it's dry. Now my question. When should I rack again to remove all the pulp and gross lees? I don't want to get any off flavors from sitting too long on the gross lees. I also have some nasty stuff at the top of the carboys I would like to get out of there so it doesn't cause any issues.

I attached some photos so you can see what I have going:

You can rack it now if you like. I think I mite hold off for a bit and let the lees compact a little more, tho. Arne.

Thanks for the reply Arne. I'll hold off a bit and then rack.
