I was going to bottle my grape wine took a ph test came out 3.5 thats ok. But still leaves a sharp tast, like to much acid although its only 8 months
old so i will cold storage it for another 6 months around 40'- deg
any other ideas.

What type of wine is it? A kit? Fresh juice? Concentrate?
Did you add oak or tannins?
 
I've read elsewhere that concord is a tricky grape to work with. I'm sure someone who has used concord for wine will chime in soon.
 
did some research and concord takes at least two years to be drinkable.

yes it dose, has a good nose, nice and dry,but still a little bite left
at the end . ill just leave it to age.

Concord can be hiogh in acid and thats why its almost always diluted like Muscadines and Scupopernongs. You can also do Calcium carbonate to drop the acidity but before doing so youll want to do an acid test and youll want to cold stabilize it afterwards anyways to precipitate the chemical out.

yes i will take a acid test, have my milwaukee setting in 7.01 buffer sol. as i type this
