I am doing 78 pounds of grapes ( clusters with stems and everything ) and expect to yield about 5 gal of wine. I just added some Lallzyme EX to the must (with skin and seed ) and will let the must sit the fridge for one week before pitching yeast ( Red Star Premier Cuvee )
