    Bottled second batch today

    TA-DA! Cabernet Sauvignon...sample tasted good. Fruity, not sweet, the way I like a cab red! BTW, little bit of foam on top is from sanitizer, StarSan tends to be that way. It goes away in an hour or two.

    Opened first bottle...VERY PLEASED...light, slightly tart, I'd say crisp, very refreshing...and it only gets better from here... :)

    Actually, this was a 2.5 gallon batch. Multiplying by 2 would give you a 5 gallon batch.

    Thanks Arne. The foam is Star San. There is no foam now. Also, I did mix campden tabs and potassium sorbate into the must prior to bottling.

    Final S.G. .995...tasted like a cross of a Chardonnay and Pinot Grigio...I am not disappointed. I look forward to opening a bottle in September. Made my second batch last night, a Cabernet Sauvignon using Alexander's Grape Concentrate. :)

    Day 21...Crystal clear, no bubbles at all, SG .995...tastes like wine, chardonnay-esque...Should I rack to secondary with potassium sorbate and campden tabs and bottle or wait another week?
