    Chocolate Extract?

I’ve got a 3 gallon batch of Cherry Port working right now with 8oz of Chocolate Extract from Olive Nation. JoesWine coached to add when racking to the secondary. He’s won several awards using extracts, tweaking wines and ports and is a great source. I tasted a sample when I polished the port...

    DangerDave's Dragon Blood Wine

Thanks! I was worried I had missed or did something wrong and after several hours of reading, I thought I would ask. At least I had enough sense to stop and didn’t make ~30 wine bombs 💣. Slowing down and letting it degas on its own, I can do. It probably didn’t help that I moved it from the...

    DangerDave's Dragon Blood Wine

DDDB foaming at bottling ? I jumped in with both feet and started the DDDB as outlined on page 1 using the tri-berry blend as called for (I did add 1lb fzn Cherries I had sitting in the freezer). I followed each step, making sure I hit each benchmark & SG. At Step 4 the SG = 0.998 for 3 days, I...

    Empty Carboy Storage Ideas

Pete - you might be able to get the plastic crates from a Hinkley Springs bottled water driver. I seem to remember seeing them in Chicago?

    Empty Carboy Storage Ideas

Here a couple of pictures of the plastic stackable crates I was referring to in the earlier post.

    Empty Carboy Storage Ideas

If you have a bottled water company nearby, they use self-locking plastic crates that stack (they each have a lip that keeps them from sliding out) on their sides. You can stack them as high as space allows and protects each carboy. These will allow you to pull/access each one without having to...

    when good wines gone bad

Perfect, Thanks 👌Just what I needed to know. I will add the 1tsp of tannin in the morning and the chocolate extract is 8oz., so everything should work. The plan is for next Christmas season, so it’s all coming together. Thank you for the help!!!

    when good wines gone bad

Joeswine, how much tannin did you add to the primary? In your sequence of photos, you are adding the extract after fermentation, when you’re racking to the Carboy; is that correct? How much extract did you add? I’m starting a Sour Cherry Port (same company as your Toasted Caramel) and want to...

    Start-up Equipment/Materials List

I found several “Starter Sets” on different sites and ended up with the Deluxe Starter Set (several on Amazon too). I found the starter sets included most everything I needed to produce a Kit; mine was a mid-tier Cab from WE. The kit included 7 1/2 gal fermenter, airlock, auto-syphon, wine...

When to add Chocolate Extract to Sour Cherry Port

I’m starting a Apres Sour Cherry Dessert Wine (Port) and purchased some Chocolate Extract from Olive Nation. I’ve searched this site and am unsure When to add? And how much?? This is a 3 gallon Kit with a starting SG target of 1.119 and a fermenting area set for 75* target temperature. Do I...

Darkroom, which site did you use to order the vintners harvest and get free shipping?

Does anyone use regular (flat) wire racks for bottle storage?

Keep the humor coming Dawg! We’re laughing with you 😂 My grandfather use to place bottles bottom out that were aging and not ready to drink yet. That way, if he was “indulging in a little too much” no one would grab a wrong bottle when sent to the cellar for another round 🤔

What other foods/drinks do you craft?

Even though I have become more of a Foodie since COVID, Limoncello is my only other diversion 🥂

    Wine Logs

Yes, I’m really liking it! Having to input each step on each batch is allowing me to learn the process and each component within each step. I like how you can set reminders inside & outside each step (by creating a new step) that reminds me to “after 5 days, to give the Carboy a twist (without...

    Wine Logs

I’m using EnoFile to track my batches. After you download App (I’m using an iPad) the first thing you do is to setup your Name/Winery and profile. Bill & Susan will start sending you emails with hints and tutorials (Biggest tip is to hit “return” when done with an input to save). Starting a...

    Taste of new wine kits.

I’m glad to hear this! Winemaker81 is correct, this is a great thread. I racked my Stag’s Leap Merlot from primary to secondary carboy, and I was worried I messed up along the way. I “sampled” the juice when I took the starting SG (hadn’t pitched the yeast yet) and I really liked what I was...

I like it 👌 That’s much better than my painters tape and sharpie to keep the carboys straight.

    Wine Logs

I am using EnoFile (Home Wine Making App | EnoFile by Brew Ventures) to keep track of batches and every detail. It will allow you to track each aspect, ingredient, and reading you care to track. It also interacts with your calendar app to keep you on track with reminders. I’m enjoying it, but...
