St. James Winery (St. James, MO)

I think it is better than the grapes I got at the local vineyard. The harvest late at nite to preserve the flavors and sugar. They cold soak it for a bit then press and SO2 and then chill it to about 35* to drop out solids.

    Wine cloudier after racking!?

Filtering is a good option. But keep in mind filtering, like turock said, is not meant to clear wine but rather give a polished finished

    Missing airlock and bung

I agree as well. If was topped up properly and had proper amounts of SO2 you should be fine given the short amount of time the airlock was off

    Clearing Apple Wine

How much k-meta have you been adding? I would not add any k-meta for a long long time - possible think about getting an SO2 tester to monitor it. Racking will not clear your wine either - like said above - those need to be sparingly and only when needed - if there is a lot of sediment. Make...

I would say you need to rack it before you leave - otherwise it will finish in the primary and be exposed to too much O2. My next question is though - if you rack to secondary and are gone for a month - who will rack it again and keep it topped up if it finishes in 2 weeks? Your secondary will...

    Filtering with Pentak housing/fillters

I had the same issue with my minijet filter. I solved this by running 3 gallons of warm acilidated water through the filter. I add 1 Tablespoon of citric acid to 1 gallon of warm water. Never had the issue again...

    Tornado Touch down.

Good to hear you are ok Dan. Here in the midwest this time of year - every time we get thunderstorms there is a chance of a Tornado - guess that's why they call it Tornado Alley... I have had several very close calls - be careful and be safe out there. Don't under estimate the power of a...
