    Thanks for the reply Wade. I did use the proper bottles and closures but like you said maybe I tried to freeze too many at a time. I was thinking of getting dry ice and only inserting the top of the bottle in it upside down so it would only freeze the top. I'm not sure if that would work or not...

    The directions for the vessel say to open the valve from the start but I had too much sediment build up too fast and it got stuck in the neck. I found it best to wait a few days after fermentation to let the sediment start dropping before opening the valve.

    Startedmy Orange Chocolate Port in May. It's aging in a 5 gallon carboy (made 2 kits) for a few more months. Just before I racked it last it tasted REALLY good. Your going to like this one. I'm looking forward to the Peach Ice Wine.
