I started 3 gallons of blueberry today. I had 19 lbs. of crushed blueberries at 1.090 sg. I added 2 teaspoons of acid blend to the must before testing. My ph tested 3.00 with the T.A. at .375. I have heard of this happening, but it puzzles me. My plan is to go ahead and ferment and test again afterward. Suggestions?
