Cellar Craft Add Meta Sulfite?

Hey guys,

Just finished my first big kit, A Cellar Craft Showcase Collection Rossi Fortissimo. Bottled it yesterday and realized I have failed to add any additional "potassium metabisulfite". Is this a big problem or will I be fine? I was planning on aging it.

I bottled a cab sav glad hatter as well but remembered to add a little over 1/4 tsp of bisulfite.

Should I be adding the pottasium at bottling or not? the instructions I looked at for any of the wines i have done in the past do not mention adding it, unless I am bulk aging, which I am not at this point.

I just don't really understand if I am supposed to add it or not at this point, any advise appreciated!

It really depends... If you bulk aged then just maybe your sulphite levels are low but if you followed the directions, there is enough sulphite added to bottle age.
 
Yes, it depends. If you're planning on drinking in under a year, you'll probably be fine. If your expectation is to hold this wine a while, I'd go back to bulk and add k-meta.

If you are like most new winemakers, there is no danger of that wine making it past a year or two anyways. It is a lot of work unbottling all of the wine, not to mention it will bind up most of the sulfite in the wine now. Then when you add some in, you are basically just getting back to where you are now. If you had a tester for sulfites, then it might be worth all the extra work to get it - just right!
