I have not tried adding salt to the wine but I do know that a small bite of a salty cheese, e.g. Pecorino Romano or Parmesan, give the wine a great boost in flavor. Could be worth a try.
'Briny' is definitely an adjective used in description of some wines. Can't say I'm a fan.
A little bit of salt won’t hurt you. Yes the average US diet has more than is healthy.
From a taste point of view it works at modifying the bitter tannin flavors. ,, Are you correcting for bitter?

Here I thought we use potassium Campden instead of Sodium Campden just to avoid a salty flavor.
