very interesting - I guess some bench trials are in order. That article led to me doing some internet searching and finding this short old thread from WMT - https://www.winemakingtalk.com/threads/salt.12961/
I have not tried adding salt to the wine but I do know that a small bite of a salty cheese, e.g. Pecorino Romano or Parmesan, give the wine a great boost in flavor. Could be worth a try.
