I am considering adding tanin to the Zinfandel kit because i heard that it doesn't quite have the bite one would expect of a hearty Zinfandel.


Anyone have constructive comments or experiences to share on this? If not, humor is always appreciated.

Bulk age for at least 3 months and taste it. If it is not tannic enough for you add a half tsp of Tancor Grand Cru, mix well, wait a month, and taste again. repeat as necessary until you like the tannin level.
 
My experience has been with tancor gran cru and personally i have never used more than 1/2 a teaspoon thus far and have been extremely happy with the results in fact i added a heavy 1/2 teaspoon to an alljuice amarone and when i tasted it right after i thought i had ruined it as the tannins were really evident but after a month the tanins mellowed and ittasted good but green at bottling now after a year i can tell you this is a great wine!!!!! I have since used a minimum of a quater teaspoon in a couple celler craft showcase kits with the grape pack and have again been extremely pleased with what it had to offer. Is it a night and day difference with the celler craft no but definately a positive difference to my palate and others compared to the same wine without it.BTW there is a newsletter that george has in his news letter archives where he did a test with tancor and the results which is quite interesting and gave me the courage to try it.
