I would like to start a micro- or even nano-winery. I’m a certified organic fruit grower. We started by making ciders for 3 years and for the past 3 years I have been making wines. Right now I'm just using glass carboys and an antique apple grinder/press. I need advice on equipment to purchase to get started on a larger scale.
I'm projected to produce @ 600 lbs. of fruit for 2025 and we plan to buy 40 bushels extra. A bushel = 48 lbs. so that means we're planning on adding 1,920 lbs.
That 1,920 plus 600 lbs. will equal roughly 2500 lbs. of fruit. That divided by 80 (to be on the safe side) should make @ 32 five-gallon batches of wines.
You can get approximately 25 to 30 bottles of wine from 5 gallons, depending on the size of the bottles used. Typically, a standard 750ml bottle will yield about 27 bottles from 5 gallons. So, this is @ 865 bottles of wine.

These are tanks and fermentors. If I don't buy the start-up kit I may buy 2 of these tanks - different sizes. There are 3 sizes, which would be good for processing small batches of grapes & peaches/apricots. And also for fermenting the larger amounts of 40 bushels of apples & pears. These look promising. I’m probably going to have to store my wines in the breezeway & kitchen for the foreseeable future. I think my small basement is too warm. I’m thinking that I should have a fruit press that can be used for juice extraction outside to keep the mess of crushing/pressing out of the house and a fermenting tank that can hold the juice for inside ferment.
