Thank you, I am doing those things. I want to make a base, then add flavoring later. would sugar and water yeast nutrient, turn to vinegar, I know it tastes bad.

Again, all of it will if you don't follow the rules. Keep your k-meta in check and keep oxygen to a minimum.

Its not easy to turn wine into vinegar unless you are very careless in your sanitation and have mother of vinegar very close or lots of fruit flies flying in your wine. You can easily make bad wine or oxidize your wine but making vinegar isnt that easy.
