Well, we have backsweetened the Moscato, added the sorbate and dosed with Meta. Thinking of bottling this weekend. Should I rack again? (It has thrown down a little sediment after adding the sugar) I am thinking yes. Other question is should I dose with Meta again? (Its been a week since I added 1/2 tsp for 6 Gallons)
 
I'd rack again just prior to bottling so I don't have to be careful while bottling. I don't let the wine splash at the last racking.
 
I would rack it again and let it settle for another week. I would not give it another dose of K-meta. The half teaspoon you added last week is MORE than enough protection. We usually talk about 1/8 to 1/4 teaspoon every 3 to 4 months. Good Luck!!
 
I would rerack too, and wait a couple of days to see if it throws more sediment before bottling. I usually do the final rack and then filter with a minijet and have not had any sediment.
 
I agree with the filtering. I filter all of my wines. It's amazing how clear they become.
 
What is amazing is how clear this wine is now. I added the clarifiers that came with the kit and overnight it became perfectly clear.
 
I'll second the wait to see if anything still drops, rack, then wait a week or so. You would be surprised the small amount of sediment that will settle over time. How far into the process is the wine. How old?
 
The wine is a 4 week Paklab kit that is about 6 weeks old. I had never worked with Kliebesol and Chitosan and am amazed at how fast they worked.
 
It may look clear to the naked eye but trust me, there's still sediment in it.
