Many of you know I made 11 gallons earlier this year and put the 2 batches through MLF.
After past 2 months and a half the chromatography still showed some malo, not done; and decided to call it done by racking and adding "some" kmeta (not home now but I think it was merely 1/4 tsp when it should've been more like 1 full tsp.
Later on while testing MLF for other wines I decided to include samples of the Chardonnay and to my surprise one of the batch showed complete..!!
The other still had some malo left.
At the 3 months mark, after adding first dose of kmeta, I racked and again added 1/4 tsp of kmeta.
Now the next 3 months mark is approaching and unfortunately I haven't invested in equipment to test SO2 levels (I know, I know, don't crucify me.. )
Question: would you add a full tsp this next time as a best guess estimate considering the small dose at the beginning?
