We are fortunate to have a lot of neighborhoods here in Fargo with streets lined with 25-30 year old Canada Red chokecherry trees. They ripen a little bit later than the green leaved varieties. They also have less astringency and more sugar. This year the trees are just loaded! In the last two days I picked 70 pounds from just three trees and I could only reach half way into the trees from my ladder. I was pulling them off in fistfuls.

wow are those nice looking. I don't think I will be doing a choke cherry this year, ours are smaller than a pea. :(
 
Very nice!!!

I have the green varietal tree in my yard. They are very astringent - alot of tannin structure.

I made the mistake of adding tannin 3 years ago when i made it - it is just not coming around to tasting good.

I picked enough to do a 6 gallon batch - have them in the freezer now..

Probably start that in the winter...
