I have been making aronia wine for the last 7 years or so -

I will use around 20lbs per 5 gallons and best to use 71b1122 yeast.

2 years ago - it came out GREAT !! most people could hardly tell it was aronia - I believe I added a touch of lemon juice
Steve; I have my first real crop of aronia this year, 5.4 kg.
Any impression what it would be if I ran a skinny 12lb batch? Do you crush then ferment on the berry like grape?

Currently working at a northern nursery: Aronía =chokeBerry. Prunus Virginia = chokeCherry
Aronía is a shrub and Chokecherry is a small tree. ChokeBerries/Aronia have small seeds ChokeCherry have largish pits.

Just want to get out there that there are two different things with similar names. It took me a while to get them straight. I have only used chokeCherry. Please continue

: Aronía =chokeBerry. . is a shrub

I have nursery stock, a named variety. The early season flavor is fairly bitter. The late July flavor is mild/ I can eat them off the bush. Prior years I have used this as a wine stable coloring agent (aronia is used in a lot of juice blends for color).
JT, I have made wild choke cherry.
