Hey everybody,


I'm still trying to get the clearing down and i have a couple of questions


1 after bulk aging an all juice kitwhen you stir in the clarifiers should youstir up the lees as well or not? and does it matter?


2 Does everybody use the siligel and liquigel or do you prefer to use super clear and if you use super kleer is it because it does a better job or is it just preference.

I don't use the clarifiers (siligel, liquigel, isinglass, etc.) at all. Given enough months of bulk aging and 2-3 rackings after finishing the "active" winemaking phase, I find the wines to be quite clear as a result of the cheapest "clarifier" of all, Time. I have never used Superkleer.

I used Sparkalloid once and am not likely to do it again (as evidenced by my post on the topic) - although it did compact the lees nicely in the end.

I agree with Bart: TIME is your friend.
 
Rack off the sediment and then add the clarifier. I have used the 2 part fining agent supplied and it works well so use it if you want to hurry things along but I choose to let time do its thing but then again I have plenty o wine aged so waiting for it to clear naturally is no big deal for me. If and when I do buy a fining agent for stubborn wines that wont clear on their own I use SuperKleer as it works very good nd fast also.
 
thanks for your responses, i have recently found that my clearing problems have been mainly due to insufficient degassing. Wade i have to thank you as i have bought the brake bleeder and used it on two of the wines that i could not clear and low and behold the thing started pulling gas up, did that for about an hour held vacuum on to the next. interestingly though the nero d avola cleared in literally 4 hours!!!!!!! and the barolo bTW both are all juice the barolo took a couple of days but it cleared!!!!!!! Amazing. I cannot believe the importance of degassing and using the drill and paddle is so subjective but with the vacuum it's either not holding vacuum and pulling up gas or holding vacuum and your done!!!!
