Today Im starting the 2nd annual Crab apple wine although this 1 will have a twist of Raspberries added to it later today when I go to my parents house to retrieve those from there freezer as they have been saving them for me. I have 32 lbs of Crab apples this year as opposed to last years 28 and dont exactly know how much Raspberries yet. Pulled Crab apples out of freezer this morning and are just about ready to add to bucket with Ascorbic acid.

Okay I have 2 buckets going with 16 lbs of crab apples in each and 5 lbs of raspberries in each and that raspberries really take over the aroma right now and smell wonderful. Havent checked the SG or added sugar as Ill wait till just before adding yeast and squeeze the heck out of the apples to extract all sugars and check then and adjust accordingly along with acid. Will be over 6 gallons for some to top up later as I have extra apples alone for a 6 gallon batch and the raspberries just top it.

The raspberries do add a lot of flavor to the wine as well as beautiful color that will stay beautiful.
 
Checked PH., TA., SG, and temp a little while ago. PH was 3.4, TA was .50 so I added acid blend to get .65 SG was 1.023 so I added sugar to get to 1.085 and that took about 4.5 lbs per bucket. I have added yeast now so it begins.
 
Here s the Crab Apple Raspberry at an Sg of 1.030. Boy is there a lot of sediment even after having having them in straining bags and running the2 buckets through 2 strainers. You really cant see how much is in the 3 gallon cause it was all stirred up but after 4 hours now it is still 1/2 way up the carboy. By the time I rack these down they will be 6 gallons most likely. Great smell coming from it though.

Both! If you dont play music for the carboys they will misbehave and stop fermenting.
 
LOL kinda like the kitty for your avatar? I remember my mom always had to put the TP on the roll back words to prevent the cats from doing that

Here's a new picture after racking the 6 gallon and 3 gallon carboys which all together had about 2 gallons worth of sediment displacing the wine!

The raspberry is almost equal with the crab apples even at the 3.2 ratio of crab apples to raspberries. There bis still a LOT of solids in there and it is still fermenting nice and slow. Its at 1.012 right now.
 
Heres an up date on this batch. The flavor is predominantly Crabapple but with a nice raspberry back.
