I am to the point of sweetening my crasin wine. I want sweeten before I use the clearing agent. Any thoughts on how I should sweeten the wine besides simple syrup? Trying to also add flavor to the wine. Any thoughts is appreciated.

you are trying to get a cranberry flavor? you can add frozen concentrated cranberry juice with no extra water.
 
Try making a sauce with fresh cranberries, and reduce that down with some added sugar. I'm getting ready to add some to one of my apple wines and that's what I plan on doing. I've heard from some people on here that do it that way and they love it. I'm just worried about adding to much flavor.

Any thoughts on how to make the sauce?? Would it be similar to making a f-pac?

This is what he smith suggested when I asked about it for my

"Making cranberrry juice is easy. Just put them in a pot with some water (or apple juice if that is your wine bace) and bring to a simmer. The berries bust open and make juice. Strain out the solids and sweeten to taste. You can add a little suger to start with to help with the juice extraction. I have not used a steam juicer or reg juicer. "

This is what I'm planning on doing, but I'm making cyser so I'll be using honey instead of sugar.

Thanks for the recipe droc. I have not done that before. Will now though. This is an excellent forum to bounce ideas off of and get advise.

To be 100% honest, most if the ideas I pass on are from other people. This forum is probably one of the most helpful I've tried. I'm actually getting ready to take a frozen apple juice concentrate and make this. I'm going to simmer it down with about 10 ounces or so of cranberries just for that hint of cranberry. I'm thinking it should come out pretty good.

If i make to much of this juice and want to save it, think it will store in the refrigerator ok? I hate to waste it.
