Determining correct age

This is a simple and yet silly question. When Determining the age of a wine what do we use as day 1 to count age.
Is it
the beginning of Fermentation process
The day Fermentation ends.

I know it would not be bottling day.

The reason I ask is I have a Super Tuscan which I started in October 5 and I was going to pop a bottle for the 1 year. However I did not finish fermenting until weeks later and did not bottle until February.
 
I go by the year picked. If you want to really narrow it down go by date the grapes were picked and de-stemmed.
 
The minute the yeast kisses the must is the day its born, we start with that date on the bottle, then also put the date it was actually bottled, that tells us how long it was bulk aged as well as the date it was started. You can always make your own rules, its your wine. WVMJ
 
The day I start it. "Starting" means crush for fruit, and pitching yeast for kits. In the case of something like my peach wine, where I freeze the fruit first, I go by yeast pitching.
