However, if I was doing it, I'd soak the mangoes in water to rehydrate. Drain the water off -- saving it! Don't toss the water. Measure the weight of the hydrated fruit and go with 6 to 8 lbs per gallon of water. Use the reserved water as part of that measurement, as it has "stuff" from the mangoes in it.
