Here is a pictuee of my pumace.
My pumace looks the same. I was thinking about your post while pressing my wines this year. When i did my Malbec, I wasn’t rushed so I patently waited for the grapes to pulse and recoil.
Because we are using an electric pump, we expect the juice to shoot out instantaneously. However, if you watch the juice flow from a basket press, the stream goes from heavy to light and pulses the harder the grapes are squeezed. I dont think its any different with the wine easy and vaccum pump. I also noticed the pressure on my pump ramping up the longer it ran. My yield was higher than expected on my Malbec. Also, make sure that you suspend the racking cane above the wine in your receiving vessel so there isnt any violent bubbling while you’re letting the press ramp up. In contrast, i was rushed on my zin because of my kids and the pomace was still damp and yield was below expectations. So, i guess it just depends.
