Thought I would share this great feedback from Winexpert:
"With good techniques, under the timeline in the instructions, all WE kits will hit between 16 and 25 PPM FSO2 at bottling. The extra quarter-teaspoon (1.5) grams puts ~10 PPM in for a total of 26-35 PPM.
The 4 gram package of sulphite included in the kit ( which is the same as 3/4 level teaspoon)will result in between 15 and 25 PPM of free sulphur dioxide in 23 litres. The legally allowable limits for dry table wine in Canada are 75 PPM of free SO2 and 275 PPM of bound, making total SO2 limits 350 PPM."
