I just opened a WE Eclipse NZ Sauv.Blanc kit and as has been discussed above found EC-1118 and KIV-1116 yeast pks. Has anyone received any info from WineXperts on how to add these to the must.
Mike mentioned possibly just using the 1116 and fermenting in the 60*F range. I was thinking the same thing.
Has anyone fermented one of these kits yet? How did it turn out?
Any advice or suggestions would be welcomed.
