Mosti Mondiale explosive fermentation

I use both the 10 gallon and 7.9 gallon buckets. Any kit that has a grape pack or raisins goes into the large bucket. I've had quite a few that have been very close to the top of the 10 gallon one including a Mosti Renaissance Amarone. Very glad I used the larger container on that one because losing any juice would have been a crime.
