After 11 months in a carboy, I bottled the FWK Australian Red Blend. It's a nice smooth red and I have even higher hopes in a few more months in the bottle. I added French oak medium plus, and 3 small peppercorns to give the wine some spicy notes. The smaller bottles 375ml could be used for gifts to my family or just for me on those occasions I only want two glasses. 🤪

Looks very nice. Great job on the labels.

The 375 ml bottles are handy for monitoring the progress of the vintage. You can get an idea of how it is aging by opening a 375 at 6 months and one at a year.
 
Ever since FWK first came out I was a big fan and made quite a few. Today I did my three month racking on a WineXpert Private Reserve Italian Colosso kit. Even at three months, IMO this wine is fantastic. Beyond fantastic! I will say the kit was expensive $203 off the shelf with no shipping. Got me to thinking I would rather make one of these instead of two cheaper varieties.
 
I'm gonna stick with WE kits. I've tried the FWK reds and whites and I just don't feel they're worth the difference in price. The price is way out of line with the quality, IMHO.
Never had a bad wine or kit taste ? Just decent wine every time , butt that’s just my thoughts 🍇🍇🍇
 
I just order the WE SPANISH WHITE $199a lot of money , butt I make a ton of cheap kits at 60 to 80 dollars
 
Hey all, regarding the new Ultima kits, be advised that the directions have changed and are different than the usual FWK process. You do not add the sulfites right after fermentation, they added a two week settling and racking step before doing so. Just wanted to call this out as if most are like me, you may just assume it is the same as Forte and not review the directions.

I wonder if this will work for all the Forte kits? make them better.

When to add the first dose of K-meta is open to judgment. I normally add it after fermentation is 100% complete, and this is for all wine types. This year I did MLF on grapes, and waited up to 6 weeks before adding K-meta, to let the MLB do its thing.
 
I guess I am an outlier but I never add my first dose of SO2 to my newly fermented wine until it has completely stopped bubbling and I see that MLF has completed (using paper chromatography). Using this system, I've had batches go unprotected for 2 or more months after fermentation. I’ve had no problems so far.

I’m with you. I keep a heat belt on the carboy to keep it around 75F. Inoculate with MLF at around SG of 1.020, and keep it under airlock for 1 month. Then rack and add Kmeta.
