I am trying my first white wine recipe, and I start with about 60 pounds of white grapes. After I juice the grapes and pour the juice into the primary it Oxidizes and turns brown? Is there a way to prevent this? will it clear?? I am using a juicer to juice the grapes.
 
Adding potassium meta bisulfide when you juice will help.

You can press grapes until they break, add Pectic enzyme for 12 hours then add yeast. Remove skins when you like. The enzyme will break down the cell structure and release the juice similarly to a juicer.
