Forgot to add the enzyme

I did a search, but apparently no one makes the same mistakes I do.

Amarone Cellarcraft Showcase with grape pack. We have been degassing and degassing, but getting foam. Great big bubbles not little ones. I didn't get this with the other two wine kits.

I went back through the directions and forgot to put in the enzyme. Is the foam because of this and should I add it now?

The enzyme pack is mainly to rid the wine of a oil like slick that can happen with thedse Cellar craft kits. If you encounter this either use the supplied enzyme pack or just rack through this by gently inserting your racking cane through this layer and try to leave it behind. I wouldnt use the pack now if your already past this point which is basically only in primary fermentation.

The enzyme is added in secondary after you have racked off the gross lees. Bentonite deactivates the enzyme so you have to at least be past that stage. You should not add in the primary as you would still have bentonite in the wine.

You can add this at any time really just follow that one rule. Some of the kits have zero problems and some have a lot so they have been adding it to all red kits these days.

It takes a few weeks to break down the white ring. If you don't have a white ring then you don't need the enzyme.
 
Thanks for stepping in Mike, thats weird that you dont use it in primary to avoid this situation instead of trying to remedy it later!
 
I got that white ring in my Pomegranate wine. Next time I will try a touch more enzime and see if that helps. (from real fruit.)
 
Oops! My apologies, I should have said it wanted us to add in the secondary. I skipped the enzyme as there is no white line. This wine seems to be turning out better than the first one. It was a WE kit and has a light sulpher smell and is watery. We are taking way more time on this one and it seems better so far, but time will tell.

We haven't tried the second batch yet and have our fingers crossed on it.

The Cellar Craft Showcase kits are all top notch. You should be very pleased with the outcome of this kit. You just have to be patient as it will take at least 12 months to get good, 18 months for really good , and 2 years to be OMG why didn't I make two at the same time! :p
