Rocky speaks the truth, the RJS Super Tuscan will be very good in 9 months, Heck mine don't survive that long.

But, I would just bottle it when it clears and age that way. You are planning a wedding, you will have enough to do. Use your invite with a little editing as the label.

A pretty good point. Once it's clear and degassed, you can just bottle it and have it ready for the wedding. Things will only get crazier as that date approaches.

couple more questions while I'm waiting for the kit to be delivered next week.

is secondary necessary if fermenting to dry in primary? how long is too long to leave exposed to grape skins and gross lees?
I can remove the grape skin bag and flood the headspace with co2 if the primary concern is o2 exposure once fermentation slows/completes.
the bucket I bought doesn't have a gasket in the lid, should I weigh it down to keep it airtight if extending primary?

why do they recommend against rehydrating the yeast? is this mainly to KISS or is there some other advantage?

does anyone aerate their must with pure 02 prior to pitching the yeast? I have a 2 micron wand and o2 canister that I use to aerate my beer, any reason not to aerate the must?

I should be gently stirring and squeezing/pressing down the wine skin bag at least once a day, correct? the instructions for the RJS kit don't mention that but I see it specified in other kits and on the forum here

is topping off with water vs wine a personal preference or should I just top off with water per the kit instructions?

can/should I add yeast nutrient (fermax or yeastex on hand) or is it not necessary for this kit?
