Hi everyone,
I was recently given a WE Okanagan Peach Ice Wine kit. I'm not a big fan of peach but hey, the kit was free.
I start the kit on a Sunday. My SG was right where my directions told me I should be (1.165). I pitched my yeast and let it go. By Tuesday morning I barely had a pulse. My house is about 65 degrees so figured it was a little cool. I put a brewers belt around the primary pail and the airlock finally started bubbling with gusto. Step 2 of the directions said to check the SG in 5-7 days and the SG should be 1.080 or less. I checked it at day 7 and the SG was exactly 1.080 so I racked the wine into a carboy. But here is my concern. I have a VERY strong smell of high alcohol. It smells like I have made rocket fuel moonshine. Is this normal for this kit and will that smell fade away? Any imput would be appreciated.
