when I taste my wines early... they are mostly "new" taste...

I have made mostly dry reds from kits so maybe the tasting is a fruit thingy..... sorry
I know that when I first started getting into wine, I could say "I like that wine", or "That wine is good, but it's not for me". As you drink more and more your palate will expand and you'll be able to pick out the earthy, mineraly, vegetal, fruit, vanilla, etc. aromas and flavours.

All above is true. But, tasting in all the stages in winemaking you can see how it transforms from grape/fruit to wine. Tasting before bottling you can detect some off flavors and correct them before its to late.
