Just bottled my Heron Bay Premium Chianti and decided to take a taste. Although it had great aroma and body....and tasted well at first.....there was an awful metal after tatse. Now, it says you should age for 6 more weeks in bottles before drinking....anyone have any similar experience with this kit, or am I doomed?

I have not made this kit but it sounds like something that should age 8-12 months before drinking and will only get better after that.
 
Generally a metallic taste is related to a wine being oxidized.

But I don't have much experience with this wine - so I would suggest what Dan said - let it age. This wine needs some aging anyway to mellow out the tannins.

I would give it a good year - and try another taste.
 
I agree. Let the wine age and hopefully that off taste will dissapate. Good luck.
 
We almost quit making wine because our first kit tasted so poor. Months later.....our first kit is awesome and our friends want more. I haven't tried your kit, but I won't open a bottle before six months again. (I hope!)
 
Thanks for the input....I feel a bit better now. I'll let it sit for a few months and then take a taste!
 
You will be surprised the difference a few months makes. I would just sample it every few months and when it tastes the way you want - bottle it.
